A simple and delicious traditional recipe from the state of Styria in Austria. Scarlet runner beans are used and cooked from dried, but they can easily be substituted for butter beans. This basic recipe can easily be enhanced by adding tomatoes, sweetcorn, green beans or boiled egg.
This soup was inspired by a Nigella Lawson recipe, yellow split pea and frankfurter soup from her book, FEAST. I had some organic yellow split peas sat there in jar crying to be used, half a hispi cabbage in the fridge and some saveloy's in the freezer. Saveloy is a seasoned sausage made from pork and typically served boiled or steamed and are often served in fish in chip shops here in the UK, similar to a frankfurter but with a firmer texture. Serves a hearty serving for 3-4
I created this bread using black wheat flour but any good quality wholemeal flour will work. You can start this bread the night before as it rests for 14-18 hours.
Adding extra plant protein in your bread with lentils is not only good for you but also helps create a lovely moist and soft bread.
