Tray bake Venison sausage with squash, tomatoes, balsamic vinegar and grapes

An all in one tray bake, easy to make and even easier to eat.

 Olive oil
 6-8 Sausages
 1 Squash peeled and cut into chunks
 A few sprigs of rosemary
 4 tbsp balsamic vinegar
 1 tbsp clear honey or maple syrup
 300ml chicken stock
 4 tomatoes cut into quarters
 Knob of butter
 Handful of walnut halves (optional)
 Couple handfuls of seedless grapes, any colour or use mixed
 2 tbsp raisins (optional)

Pre heat the oven to 180c

Toss the sausages and squash in some oil and place in your roasting tin/try with the rosemary, season and roast for approx. 20 mins

Take out of the oven, add the balsamic, honey and stock, stir through and cook for a further 10 mins

Take out of the oven again, stir in the butter until melted, then add the tomatoes, nuts and grapes and roast for a further 10 min until your have charred sausages, just about to melt tomatoes and some bubbling sauce

Serve on its own or with a side of green veg like broccoli, beans or spinach
