Banana, coconut, allspice and pecan muffins

Homemade muffins are an absolute pleasure to make, the variety at hand is almost endless and once you master the method it becomes so easy, wet ingredients, dry ingredients, mix and bake, simple as that. These muffins came about after testing recipes from Caribbean Modern. Banana, allspice and coconut, classic ingredients of the islands.

 100g Melted butter
 100g honey
 1 tsp vanilla extract/paste
 2 large ripe bananas chopped
 2 large eggs
 150g plain yogurt
 125g Self raising flour
 125g Sweet potato flour
 1 ½ tsp ground allspice
 4 tbsp desiccated coconut – plus extra for garnish on top
 100g pecan nuts broken up into small pieces

Preheat the oven to 190c or 170c fan

Prep your muffin tray and cases

Blitz the wet ingredients together

In a bowl mix all the dry ingredients together

Add the wet mixture to the dry mixture and mix together, but don’t over mix

Fill your muffin cases and then sprinkle with the extra coconut

Bake for 20-25 minutes, check with a skewer to ensure they are done

Leave to cool for 10 minutes and then you can eat away
