Poor mans potatoes, patatas a lo pobre

This classic Spanish dish is utterly delicious and addictive, one of my favourite potato dishes to make. This can be served on it's own, with a fried egg, jamon or as a side dish to accompany any meat or fish dish.

Serves 2-3 either as a main or a side.

 125 ml Extra virgin olive oil, this is essential in my opinion and of course anyone who is Spanish will agree.
 2 Onions, peeled and sliced
 3 Large peppers, green, red or yellow or a mixture, cut into 1cm strips
 500 g Waxy potatoes, peeled and cut into 1cm thick slices
 2 Garlic cloves, peeled and sliced
 1 Bay leaf
 1 Thyme sprig plus extra to garnish
 Salt and pepper to season
 2 tbsp Flat leaf parsley, chopped

Pre-heat your oven to 180c / Fan 160c

Heat the oil in a large ovenproof frying pan over a medium heat and add the sliced onion, frying for approx. 15 mins until nicely golden.

Add the garlic and stir for a couple of minutes and then add the pepper, bay leaf and thyme sprig, stir and fry for about 8 minutes.

Add the potato slices, stir really well to cover them in the oil and fry stirring occasionally for 10 minutes.

Transfer the pan to the over and cook for 10 minutes, remove the pan stir really well and return to the oven for a further 10 minutes.

Remove from the oven, the vegetables should now be nicely caramelized, if not pop them back in the over for a further 5 minutes, then season well with salt and pepper, scatter over the thyme leaves and parsley and serve.
