Scouse

A traditional British recipe from the land of scousers.

 500g Beef shin cut into cubes
 500g Lamb neck cut into cubes
 2 tbsp plain flour
 Salt and pepper
 Oil for frying
 1 red onion roughly chopped
 2 carrots sliced
 2 potatoes cut into cubes
 1 tsp dried thyme
 1 tbsp tomato puree
 4 anchovies
 1 bottle of beer
 l beef stock
 2 tbsp Worcester sauce

Pre-heat your oven to 180c

Toss all your meat in the flour and season well

Brown all your meat and set aside

In a casserole pan, fry the onions for approx. 5 mins

Add the thyme and fry for 2 mins

Add the anchovies and fry until dissolved

Add the carrots and potatoes and fry, stirring for 3-4 mins

Add the tomato puree and stir through

Add the beer, stock and Worcester sauce and heat to a simmer

Add the meat and any juices

Place in the oven for approx. 2 hours stirring through occasionally
