Christmas donuts

This is not truly a donut batter as it contains no yeast but I used a donut tin to create the round cakes. If you don't have a donut tray then this mixture is very similar to a muffin mix so feel free to use a muffin tray instead. This recipe can be made using any mincemeat of your choice but for an extra treat why not try making our superfood goji and cranberry mincemeat instead.

 100g plain flour
 1 tsp baking powder
 175g Mincemeat
 1 large egg, lightly beaten
 2 tbsp sunflower oil
 100g natural yoghurt
 Zest of 1 clementine/orange
 ½ tsp vanilla extract/vanilla bean paste
Icing:
 100g icing sugar
 ¼ tsp mixed spice
 2-3 tbsp Grand Marnier/Brandy/Cointreau

Heat the oven to 180c/fan 160c

Mix all the ingredients together and beat until smooth

Grease a 6-hole donut tray with a little oil

Using a spoon dollop the mixture into the rings

Bake for 10-12 minutes until risen, springy and browned

Leave to cool then transfer to a wire rack

Mix the icing sugar ingredients together until you have a smooth runny icing, add more alcohol if needed

Drizzle over the donuts and leave to set
