This is a traditional Turkish dish, mix and match the vegetables however you like, use as a main or as a side dish.

 2 aubergines cut into big chunks
 1 red onion roughly chopped
 3 garlic cloves sliced thickly
 2 green peppers cut into chunks
 3 carrots peeled and cut into chunks
 2 turnips cut into chunks
 1 kohl rabi peeled and cut into chunks
 2 courgettes cut into chunks
 4 tbsp extra virgin olive oil
 1 tsp ground allspice
 3 teaspoons of crushed coriander seeds
 1 tin drained chickpeas
 200ml passata or preferably homemade tomato sauce
 Chopped herbs – parsley/coriander/mint – whatever you like, or even a mixture
 Salt and pepper

Pre-heat the oven to 200c

In a large bowl toss all the vegetables other than the courgettes with the oil, allspice, coriander and some seasonings

Spread out on a baking tray and place in the oven, turning every 10 mins or so

After 45 mins, gently stir in the courgettes and cook for a further 15 mins

Whilst you are doing this, heat up the passata or sauce with the chickpeas

When the vegetables are all done mix everything together and serve
