Leek, fava bean and thyme soup

Dried split fava beans are very easy to use, they cook down after a slow simmer and make a lovely smooth soup

 30g butter
 2 large leeks, finely sliced
 Leaves of 3-4 sprigs of thyme, or use dried
 200g dried split fava beans
 750ml vegetable stock
 Extra virgin olive oil to serve

Heat the butter and fry the leeks until soft, approx. 10 mins

Add the thyme and stir through

Add the beans and stir trough

Add the stock, bring to the boil then simmer for 20-30 mins until the beans have softened

5

Blitz the soup and season then serve drizzled with oil and chopped fresh thyme if you are using it
