Swede and squash soup with thyme and chorizo

Root vegetable always make a lovely winter soups, omit the chorizo if you really have to.

Directions

Heat the oil and butter

Add the onion and fry until soft

Stir in the thyme and fry for 1-2 minutes

Add the swede and squash and for 1-2 minutes

Add the stock, bring to the boil and simmer until tender, approx. 20 minutes

Blitz in a blender or use a handheld blender and then season well

Meanwhile, fry the chorizo in a dry pan until golden and the oil has oozed out

Serve up the soup with a pile of chorizo in the middle and a drizzle of chorizo oil

Ingredients

Olive oil

Small knob of butter

1 onion chopped

1 teaspoon of chopped fresh thyme (or dried)

½ a small swede, peeled and chopped into cubes

1 small squash, peeled and chopped into cubes

1.5 Ltrs Chicken stock (or use vegetable stock)

100g cooking chorizo chopped into small cubes
